To design an experimental winery is a pure meditation on what we don't have to do when we build a house. We do as little as possible. We don't add insulation, we don't use any technological advances, we don't clad or tile, we don't combine materials. We simply create. Our tools will be poetry and punk. It won't be for everyone, but whoever likes it will love it. Whatever. When it gets cold, we'll build a fire. When it gets dark, we'll light candles or let the darkness work its magic. We don't conceal anything, everything is exposed. People can sit wherever they want and do whatever they like. Not giving a damn about the norms and clichés is difficult, but liberating.
